Healthy Egg Bake

What you need: 

6 cups of blanched broccoli (chopped)
2 packs of Jimmy Dean turkey sausage links (chopped) 
2 cup shredded Mozzarella
8-10 eggs, well beaten
Fresh-ground black pepper
5-8 small bell peppers (chopped)

2 Bloody Mary's and a side of black coffee


Cooking Directions:

  1. Heat oven to 350. Spray a 9″x12″ casserole dish with non-stick spray. 
  2. Bring a medium-sized pot of water to a boil and cook the broccoli about 2 minutes; then pour excess water into sink and let it drain well. Chop the turkey sausage while the broccoli drains.
  3. Layer broccoli, bell peppers, turkey sausage, Mozzarella, in casserole dish. Season with fresh-ground black pepper and pour beaten egg over. Use a fork to “stir” the mixture just until all the ingredients are coated with egg. (I added Frank's Red Hot sauce for a little zip)
  4. Bake 35-45 minutes, or until all the mixture is set.
  5. Enjoy.
